Everybody’s a little bit Irish on St Patrick’s Day, and here are 15 recipes to make the most of it.
Baked potato farls
A farl in Gaelic means one-fourth, and here refers to a quarter of a flatbread made from mashed potatoes. Irish superstition has it that baked goods, including soda bread, must be marked with a cross to bless them and "to let the devils out". A triangle of this tender, supple bread makes a lovely accompaniment to soup. Once cooked, the flatbreads freeze well, so just double the recipe for a rainy day.

Rather than mashing the potato and sweet potato together, I like to keep them a bit separate – it gives the dish more character. And just like mashed potato, the secret to top colcannon is lots of good-quality butter.

Paler and with a softer crumb than most fruit cakes because of the addition of creme fraiche, this luxurious cake needs no more than a dusting of icing sugar for serving. Of course you can use a different spirit, but why not get into the spirit of the day with a little "water of life"?

Colcannon is a wonderful Irish celebration of spud, chockers with spring onions. Take it to the next level with swirls of rich green kale. Top with a melting pool of butter and a crumble of black pudding or chorizo, or serve with grilled mushrooms, salmon, or lamb chops.

Fennel and brown sugar soda bread
Ridiculously easy to make, a loaf of this soda bread fresh out of the oven can augment any brunch or lunch spread – hot soup, for instance, although the flavour of the fennel seeds is especially lovely with smoked salmon. Marking the loaf with a cross before it goes into the oven is believed to ward off the devil and protect the household. Tradition and symbolism aside, doing this before it goes into the oven allows for more even baking – a good enough reason for me.
