Wild hibiscus mojito popsicles

Ingredients
180ml white rum
3 tbsp fresh lime juice
160ml hibiscus flower syrup*
250ml soda water
8 hibiscus flowers
mint leaves to garnish
* Hibiscus flowers in syrup are available from specialty food stores.
Method
Mix rum, lime juice, syrup and soda water in a medium jug.
Place mint leaves and hibiscus flowers into popsicle moulds.
Top with mixture and freeze for 3-4 hours, until set.
