Prawns with mango salsa

Ingredients
2 medium-sized firm but ripe mangoes.
2 tbsp finely chopped green onions.
2 tsp pickled ginger, finely chopped.
1 small red chilli, seeded and finely chopped.
1 tbsp Vietnamese mint, coarsely chopped.
16 green king prawns, deveined and peeled with tail intact.
1 tbsp olive oil.
Method
Peel the mangoes and chop the flesh finely. Combine with the onion, pickled ginger, chilli and mint. Mix gently and set aside.
Toss the prawns in the oil. Cook on a hot chargrill or barbecue until they just turn white, turning once. Serve with the salsa.
