Chocolate waffles with caramel bananas and cinnamon cream
Waffles, an American breakfast favourite, are not so healthy but quite delicious if you feel like a decadent way to start the day. They are best when paired with simple flavours such as fresh berries, vanilla ice-cream or chocolate sauce and banana.
Ingredients
220g self-raising flour
2 tbsp cocoa
3 tbsp sugar
pinch of salt
2 eggs, separated
1 1/2 cups pouring cream
5 tbsp butter, melted
For the caramel
100g sugar
100ml thickened cream
3 bananas, peeled and cut into chunks
For the cinnamon cream
200ml thickened cream
¼ tsp ground cinnamon
Method
Sift the flour, cocoa, sugar and salt into a bowl. Beat the egg yolks until thick, add cream and mix lightly. Combine the egg and the flour mixtures and stir until smooth. Mix in 1 1/2 tablespoons of melted butter. Beat the egg whites until stiff and fold into batter.
For the caramel, melt the sugar in a medium saucepan over a low to medium heat until it turns golden. When the caramel is dark, add the cream and leave for 30 seconds. Be careful as it will spit and bubble furiously. When it settles down, stir the mixture then add the banana and mix into caramel. For the cinnamon cream, combine the cream and cinnamon and whip to a soft peak. Heat a waffle iron and brush some of the melted butter on the surface, add half a cup of batter, close the iron and cook for two minutes. Remove waffle and keep it warm, repeat to make five more. Serve with banana caramel and a scoop of cream.
TIP
If you don't have a waffle iron and don't want to buy one, you can cook the waffle batter in the same way as a pancake.
