With expectations raised, the wait for mains can feel Test match long, so start with spicy samosas with golden crusts and add a not-too-sweet mango lassi. A butter chicken (the ‘speciality of the house’) balances sweet and spicy as deftly as the latest Bollywood blockbuster, but don’t overlook vegetarian dishes such as tadka daal: green lentils cooked to a fluffy finish and flavoured with coriander and ginger.
