Iced ginger and lime slushie
A beautiful cooling drink to serve on a hot day, you can add more or less ginger, mint and lime to suit your tastes. The vodka is optional, but rather nice.
Ingredients
220g (1 cup) sugar
500ml (2 cups) water
1 x 5cm piece of fresh ginger, peeled
zest of 2 limes, grated
fresh mint leaves
80ml (1/3 cup) lime juice
vodka (optional)
Method
Place sugar and water in a saucepan, cook over a low heat until sugar dissolves. Shred ginger thinly and add to simmering sugar syrup. Add zest and 2 to 3 mint leaves. Allow to simmer for 5 to 10 minutes to allow flavours to infuse. Strain, add lime juice and place in a bowl.
Place bowl in freezer for 2 hours. Remove and stir well with a fork to break up the ice crystals. Return to freezer and stir every hour to break up ice crystals for the next 4 to 6 hours. Chill your glasses in the freezer.
To serve, finely shred some mint leaves and stir through slushie.
If using vodka pour into chilled glasses, pour slushie over and serve immediately.
