Frank Camorra's crab cakes
Served with hot sauce and lemon, crab cakes make a delicious snack.
Ingredients
2 eggs
1 tbsp Worcestershire sauce
1 dash Tabasco sauce
½ tsp smoked paprika
1 tsp horseradish cream
1 tbsp dijon mustard
1 tbsp chopped chives
½ tbsp chopped tarragon
4 slices crustless white bread, torn into pieces
¼ cup mayonnaise
60ml olive oil
450g crab meat
Method
Step 1
Place ingredients except the crab meat and oil in a bowl and work together well with your hands.
Step 2
Fold crab into mix and rest for 30 minutes.
Step 3
Form cakes about 1 tbsp in size and place on a plate. The mix will be quite wet and you will need to be careful when flipping them.
Step 4
Pour oil into a preheated frying pan. Cook cakes on medium heat and keep at 5cm diameter or they will break up. Place on absorbent paper, serve with hot sauce and lemon.
