Bay Bua
Vietnamese$$
Word is legendary chef Tetsuya Wakuda eats here and, given that the location is not what you'd call glamorous or convenient, it's the food he's a fan of. Rice cakes with prawn, mung bean and shallots are a textural delight, a crisp outer gives way to a molten centre and the paste is proof the Vietnamese know just how to balance the sweet and the salty. Bonfire chicken adds a touch of the theatrics; accompanied with ricepaper rolls, pickled vegetables and anchovy sauce, it's a sort of DIY job, although help is graciously always on hand.
