Aussie burger - reader recipe
Make these towering burgers to celebrate living in Australia.
Ingredients
600g good Aussie beef mince
1/2 onion, chopped
2 teaspoons Vegemite
6 bread rolls of your choice (I used turkish bread)
6 handfuls baby spinach
6 slices beetroot, drained
6 pineapple rings, drained
6 eggs
Barbecue sauce, to serve
bamboo skewers, to hold the burger together
Method
Mix the beef, onion and Vegemite in a medium bowl until combined, then form into 6 patties. Place on a plate, cover in cling wrap and refrigerate for at least 30 minutes. Heat your BBQ hotplate and cook the burgers, turning once, for approximately 10 minutes or until cooked through. The time will depend on how thick your patties are.
Split the bread rolls in half and place the baby spinach onto the bottom half. Place a burger on top, then a slice of beetroot, then a pineapple ring.
Now fry the eggs, in a couple of batches if necessary. As soon as the eggs are cooked to your liking, put one on top of each pineapple ring. Drizzle over some BBQ sauce, then place the other half of the bread roll on top and spear with a bamboo skewer. Serve and enjoy!
