Red Thai curry of fish

This John Dory curry is a bit out of the ordinary. By cooking down the sauce to an intense paste then smearing it over the fillet, it looks amazing and tastes incredible. The mix of coriander, crispy shallot and lime leaf tops it all off. If you can't find John Dory, substitute it for flathead or whiting. If it's a thicker fillet, slice it in half so it cooks quickly under the grill.

This pumpkin curry is a simple base that can be adapted to lots of different vegetables and meats. I have used broad beans here as they are in season now. Try to get the smaller pods if possible, as they will be more tender and you won't have to double skin them.

Summer means it's time to get outside and light the barbie. For something a bit different, I have been making Thai fish cakes - they cook incredibly well on the flat plate of my barbie. The mix of chilli, ginger, coconut and lime leaf is so refreshing in an outdoor setting with an ice cold beer.

I might invent a different topping for the Sunday morning pancakes, or try something unusual with eggs, such as this baked recipe with spinach sauce. For a more rustic dish, instead of pureeing the spinach chop it by hand, blanch it and squeeze out the water, then mix it with the fried onion.
