Dishwashers are demanding up to $50 an hour to work on weekends while restaurant managers are being offered $20,000 sign-on bonuses by rival eateries, says one Sydney restaurateur.

Bodhi Restaurant owner Heaven Leigh says in her 30 years in hospitality, she has never seen anything like what is being faced by the industry as it tries to fill a nearly insatiable appetite for staff.
