“You can stop making it, or see climate change as an opportunity” for a new recipe, says Louis Roederer’s cellar master. Moët & Chandon agrees.

They are the cellar masters at two of Champagne’s most famous houses, competing on wine shop shelves and restaurant lists around the world. But Benoît Gouez of Moët & Chandon and Jean-Baptiste Lécaillon of Louis Roederer are in furious agreement on one thing: climate change has had a huge impact on grape-growing and winemaking in their region.

At Moët & Chandon, 2015 was the year the brand realised that everything had changed: the climate, their grapes, and the traditional way of doing things.
