Chef residencies, like lightning, are not meant to strike the same place twice. They’re pop-ups, designed to lure punters in on the basis of being a never-to-be-repeated event. A repeated pop-up, therefore, would be a twice-cooked souffle, with the potential of never reaching the heights of the original.
But what if the first residency had a waitlist of more than 2000 people? And what if the two restaurants involved – host and guest – fell for each other, big time?
