The best advice I can give anyone who is planning to cook on Christmas Day is to never ignore the obvious.
Start slow and easy with a celebration of fresh seafood, one of Australia’s great strengths. Move on to something substantial that will make a stunning centrepiece on the table, around which you can gather your favourite side dishes. Finish with something light and refreshing that will go with whatever non-negotiable pavlova or plum pudding tradition your family may have.
