TASMANIA’S climate is perfectly fitting for producing fine fermented foods and our abundant quality, fresh organic produce makes for excellent ingredients. As well as being bold flavoured, fermented foods foster living probiotic cultures or “good bacteria”, which are great for stomach and digestive conditions.

Southern Wild

Southern Wild makes and sells vegan, unpasteurised products, alive with probiotic cultures. Their kimchi varies season to season, using locally grown, organic produce. Fresh unpasteurised tempeh is another of their offerings. They also sell a monthly “Ferment Box” direct to subscribing customers, with a seasonally changing selection of Sauerkraut, Pickles, Miso, Shio Koji, and Kimchi. Find their stall at Hobart’s Farm Gate Market. www.southernwild.com.au

Only high quality ingredients are used including pure spring water and cold pressed juices. https://loveyourguts.co/

Riverless Cottage

Riverless Cottage makes a classic kombucha from raw sugar and a fermented honey version. The ingredients are locally and organically produced. The kombucha is flavoured with quality syrups including Ashbolt’s elderberry and elderflower from the Derwent Valley. Ginger and beetroot flavours are also available. Find them at Hobart’s Farm Gate Market, Richmond IGA, Little Missy Patisserie, City Organics and Czegs’ Cafe. riverless-cottage.com/

Three Fermented Queens

Everything made by this artisan fermenter is raw, vegan and handmade in the Tamar Valley, including Classic, Ginger Beet and Royal Curry sauerkrauts. Their Kimchi has a local twist with Tasmanian pepper berries and seaweed. Green Tea Detox is the signature kombucha, and like the sauerkrauts, can be found at markets and in Hill Street Grocer stores. New to the line-up is a make-your-own kombucha starter kit. threefermentedqueens.com.au
