Ultimate BLT
The perfect combination of salty bacon, crunchy lettuce and sweet tomato is loved by most.. I’ve taken it up a notch with the addition of a simple basil and garlic mayonnaise and using a really sturdy, good quality bread is the trick to staving off sogginess whilst it sits in your lunch box.
Ingredients
2 rashers eye bacon
3 slices tomato
2 lettuce leaves
2 slices of good sourdough bread
1/2 clove garlic
1/4 cup basil leaves
1/2 cup good quality whole egg mayonnaise

Method
Fry the bacon in a small non-stick frying pan until crisp (about 3 minutes per side). Alternatively, if you’re doing a big batch, bake on a tray in the oven set at 220°C for 10-15 minutes.
To make the mayonnaise, place the garlic, basil, mayonnaise and pepper in a small container and whizz with a stab blender (or use a mini processor).
To assemble the sandwich, spread a teaspoon of the mayonnaise on each slice of the sourdough bread. Top with the lettuce, tomato and bacon.
OPTIONAL: For a more indulgent sandwich add some sliced avocado (BLAT).
