Chef Happy Cook knows his noodles. It’s been a while since his Chinatown heyday at upmarket Fortuna Village (not to mention his Guinness Book of Records title for pulling 4096 noodles in less than a minute), yet this nondescript suburban diner is a gem. Try sesame-seed-encrusted pastry pockets of finely minced onion, celery, pork and preserved cabbage; or sumptuous pork ribs that pack a flavour punch courtesy of spring onion, coriander and chilli. There’s a variety of noodles, thick or thin, slicked with oil and perhaps tossed with shredded beef, as well as masterful Peking duck.
