‘Before I’ve even opened my eyes I’m drinking a flat white’: A baker’s day on a plate

7am First thing I have before I’ve even opened my eyes completely is homemade flat white made by my partner on our home machine.

10.30am I’m not a huge brekkie person, a bit of a bad habit I have fallen into since having kids. My first meal of the day ends up being lunch too. Today it’s a curried egg sandwich made with truffle mayonnaise, served on rye with some butter lettuce. And I always have a sweet treat; today it’s two homemade pistachio amaretti with my second flat white.

3pm A snack with the kids: a cosmic crisp apple and some sweet potato puffs.

6.30pm Dinner tonight is slow-roasted lamb shoulder with a Greek salad and some homemade flatbreads. This is not the norm, but we’ve had a slow day, so a little cooking was achievable.

9pm As always, I finish the day with a Lindt hazelnut chocolate and a cup of tea in bed.

Top marks for… Your choice of breads. Rye is associated with excellent gut health, thought to be due to its combination of antioxidants, prebiotics and fibres. Making your own flatbreads is terrific as most store-bought flatbreads contain preservatives and other additives.

If you keep eating like this you’ll… Miss out on all the protective factors and nutrients found in the full spectrum of plant foods. This day lacked nuts, seeds and legumes and fell short on fruit and vegetables. It’s OK to skip breakfast, but it does mean you have fewer meals in which to meet your recommended daily serves of each food group.

Why don’t you try… Skipping the puffed snacks in favour of a fruit salad with yoghurt, topped with a nut and seed mix. Or whip up a smoothie with your apple adding spinach, celery, mint, banana and the milk of your choice. Serve your flatbreads with hummus and/or avocado.
