It's the meal you put together when you don't want to cook and tuna is all you have left in the pantry. Excellent served over warm boiled potatoes.

Ingredients

  • 1 medium tin of tuna in olive oil

  • 14 cup red radishes, sliced into half-circles

  • 1 tbsp extra virgin olive oil

  • 1 tsp white wine vinegar

  • 14 tsp Celtic sea salt

  • 14 cup red onion, sliced into fine rings

  • 1 tsp capers

  • 1 tsp good quality dried Greek oregano

  • 12 loaf fresh sourdough casalinga, sliced

Method

  1. In a bowl, break up the tuna. Mix in the radishes, olive oil, vinegar and sea salt. Top with the onion rings, capers and a sprinkling of oregano.

    Now, you can either pile the mixture on to slices of bread and eat it as an open sandwich or scoop it from the bowl on to two plates and serve the bread alongside.
