Sydney Airport lands Shannon Bennett, Wolfgang Puck and a Kitchen by Mike
Acclaimed Melbourne-based chef Shannon Bennett is finally opening a venue in Sydney. But, rather than a northern outpost of his two-hatted Vue de Monde restaurant or one-hatted Bistro Vue, Bennett will be opening a burger joint. And you'll have to make it past international customs to eat there.
Named Benny Burger (after Bennett's father), the gourmet burger offering is one of five new food brands scheduled to open in mid-to-late 2016 at Sydney Airport's T1 International Departures .
Joining Bennett at the dining precinct known as City View is also a Kitchen by Mike canteen from Mike McEnearney, Danish-based freshly-squeezed juice franchise Joe and the Juice, a bespoke Heineken bar and - foodies, hold your breath - The Bistro by Austrian-American powerhouse chef Wolfgang Puck.
The Bistro is the first Australian endeavour from the lauded celebrity chef and restaurateur, who has more than 70 fine-dining and casual venues under the Puck name around the globe.
It will serve modern Italian fare including pasta and wood-fired pizza in a relaxed trattoria-style setting.
"I am delighted to partner with Sydney Airport and launch The Bistro in T1," said Puck in a statement. "I hope passengers travelling internationally are just as excited as we are about this new and unique offering."
Benny Burger, meanwhile, will offer a range of burgers made from organic and wild-sourced ingredients.
Its signature burger, The Chang, is a combination of Blackmore wagyu, free-range fried egg and pickled beetroot and we're 99 per cent sure the name is a cheeky reference to Momofuku chef David Chang's comment that "Australia has no idea what a burger is".
"At Benny Burger, every aspect of our operation has a tale to tell, says Bennett. "Our organic produce, sustainable practices, uniforms and packaging, even the materials used to construct the store, all have stories that combine to create not just an amazing burger, but an experience to feel good about."
The City View precinct restaurants will also be joined by a fleet of new luxury shopping outlets showcasing 13 international brands and set to open in mid-2016.
