Sokyo chef Chase Kojima to open Simulation Senpai at Darling Square
What's not to love when a hatted chef opens a sideline takeaway spin-off with the same devotion to produce and quality as the mothership?
Chase Kojima, the chef behind the hatted Sokyo restaurant in Pyrmont, is joining the party down at the Darling Square development, sliding into the Maker's Dozen concept in the Kengo Kuma-designed Exchange building.
Simulation Senpai is a permanent bricks-and-mortar home for the pop-up concept Kojima operated at the Tramsheds at Forest Lodge.
"When you order takeaway you automatically think it isn't made with the best ingredients or it wasn't designed to be eaten that way.
"I'll use the same suppliers as Sokyo. We want it to taste great if you eat it in 20 minutes or straight away, so we might do things like put the sauce on the side."
Simulation Senpai opens in May.
