Meet the kooky new sprouted coconut hitting the market

With a sponge-like texture akin to angel food cake, this quirky new coconut grown in North Queensland is set to get tongues wagging and tastebuds tingling.

Soft, fluffy and with a sponge-like consistency that melts in the mouth as if it was fairy floss – meet the newest coconut to hit the market.

The sprouted coconut is a mature common coconut that has begun to sprout, ready to turn into another tree, with the water inside the shell transforming into a solid, spongy mass.

It has a slightly tangy, slightly sweet but borderline savoury coconut flavour, and has been likened to angel food cake.

Also known as jungle bread, it is popular in vegan cuisine overseas, cut up as a snack, cut up into croutons, dipped into vegan fondue, stirred through curries or tossed in salads.

Award-winning North Queensland Farmers Peter and Alison Salleras from Fruit Forest Farm in Mission Beach have begun producing the kooky coconut for distribution to restaurants and cafes from Byron to the Sunshine Coast exclusively through Brisbane wholesaler Suncoast Fresh.

However, there are only extremely limited quantities available, so if you want to try the tropical delicacy, be sure to ask your local eatery to order some in.
