It’s become a must-order dish at his Greek dining institution Hellenika in Fortitude Valley, now restaurateur Simon Gloftis is planning to patent the recipe for his beloved zucchini chips.
Coated in the crispest of batters and deep-fried until golden, the oblong-shaped bites are sold by the thousands each week.
Worried about copycat versions popping up at other eateries, Mr Gloftis said he wanted to ensure the dish remained a signature of Hellenika.
“They are Hellenika and I want to make sure they stay that way,” he said.
Mr Gloftis isn’t the first Brisbane restaurateur to protect a signature dish from imitations.
