A fun and nutritious twist on an old favourite - these pikelet creatures will disappear before your eyes.

Ingredients

  • 1 small zucchini, coarsely grated

  • 1/2 tsp olive oil

  • 1 small carrot, grated

  • 1/2 cup fresh corn kernals

  • 1 cup wholemeal self-raising flour

  • 1 & 1/2 cups buttermilk

  • 1 egg, lightly beaten

  • 1/2 cup fat-reduced grated tasty cheese

  • olive oil cooking spray

Method

  1. Squeeze the juice from the grated zucchini. Heat oil and cook zucchini, carrot and corn. Cook, stirring for 3 minutes or until soft. Set aside.

    Sift flour into a large bowl. Add wholemeal husks to bowl also. Add buttermilk and egg. Whisk to combine. Addzucchini mixture and cheese. Stir to combine.

    Spray pan with oil. Heat over medium heat. Using 1 heaped tablespoon per pikelet, and cook til bubbles appear on the surface. Turn and cook until cooked through.

    For little creatures all you need to do is half fill the animal silicon dishes from the Lunch Boxes with Love range and pop in the oven for 20 minutes on 180 degrees.

    You can freeze cooked pikelets/creatures for up to 3 months.
