Sake Manly opens at Manly Wharf
Chef Shaun Presland has admired Luchetti Krelle's work close-up since the first Sake Restaurant at The Rocks.
But he's like a kid in a lolly store about the row of circular cut-outs at Sake Manly, which opens its doors on Thursday, November 9 at Manly Wharf.
The moongates – traditional circular openings found in Japanese architecture – divide Sake's four dining rooms.
"When they are open you can see all the way through to the harbour," the chef says. "The interior is insane, Rachel Luchetti has outdone herself this time."
Presland, who is opening a restaurant next year in London but remains a consultant at Sake, is in Sydney working with head chef Shoji Toru on the opening menu.
And they've spared a thought for Manly's health conscious.
"We're doing a no-rice, no-nori sushi roll where we use a paper-thin daikon instead of nori and stuff it with salad instead of rice," Presland says.
As well as Sake's usual line-up of sushi, sashimi and izakaya-style food, the newest Sake restaurant has another dish exclusive to the Manly location.
Grandmaster sizzle is a Japanese take on a traditional hamburger steak served on a sizzling hotplate. Very Manly, 2018 style.
