The Bourdain effect: foodie tourists seek culinary thrills

As a new breed of traveller roams the globe in search of unusual or 'authentic' dishes, businesses small and large are catering to their tastes.

In the remote coastal villages of far east Russia, where the nomadic Chukchi still hunt walrus with handcrafted ivory-headed harpoons, it is ritual to offer visitors freshly caught meat.

“You cannot refuse,” says Barbara Muckermann, chief marketing officer of Silversea Cruises, whose ships dock in the region several times a year. “Sharing food is important in their culture.”
