Years before celebrities like Matt Damon, Jessica Chastain and Liam Hemsworth were jetting to Copenhagen’s most sought-after two-starred Michelin restaurant, Alchemist, its chef Rasmus Munk was serving a surprising side dish with his lamb heart tartare: an organ donation sign-up form.
Equally surprising for Munk and his team at Alchemist’s first address, a petite 15-seater that closed in 2017, is that 1500 diners became donors as a result. Viewed by cynics as a stunt, the dish instead prompted the reaction Munk had wanted. It was the young chef’s first real taste of using food to power social causes.
