“My kids give me a lot of grief about my dad-joke cocktail names,” says Andrew Baturo of Brisbane’s new Naga Thai, who christened the #DontBeKoi cocktail shown here. “But people don’t need to know how serious we are about making our drinks complex and balanced. They just need to know how much fun it is to drink them.”

Baturo talks a lot about fun, which he says has been missing from “the reset the industry needed”. “I want to come out of the bleakness of COVID and back into the blazing colour and energy, fun and excitement of dining out,” he says. “People now understand just how important restaurants are in their community.”
