There are few cake lovers in Australia who have not joined a queue at Black Star Pastry for Christopher Thé’s strawberry and watermelon cake, the multilayered confection with rose-scented cream that has been dubbed the most Instagrammed cake in the world.

So how did Thé go from opening a tiny hole-in-the-wall bakery in Sydney’s Newtown in 2008, to being on the brink of expansion to New York, Los Angeles, Hong Kong and Singapore in 2019? For this freshly baked Easter edition of Chef on Chef, we asked Alistair Wise of Hobart’s much-loved Sweet Envy to find out for us. The fact that he, too, is a great pastry chef, is just the icing on the cake.
