Jai Lyons’ winter cocktail menu has just been approved and relief is giving way to a realisation of the job ahead.

As bar manager of Barangaroo House in Sydney’s CBD, Lyons oversees 25 staff and three drinks venues at the western harbour venue. It gets hectic, but that has not meant doing things the easy way. Quite the opposite.
