‘My daughter’s apple and her leftover porridge’: This designer’s day on a plate
Ebony Eagles is an Australian fashion designer. The 41-year-old is the managing director of Auguste The Label.
6am I always start the day with a big glass of water followed by a stove-top coffee with oat milk. I keep up my water intake all day.
6.30am A few pieces of my daughter’s apple and her leftover porridge – a mum’s life!
6.45am A walk across the road to feed my horses, then breakfast of a chai tea and a plain croissant.
1.30pm Lunch is a warm vegie and lentil curry with brown rice from the local health food store. In the afternoon I have a large mug of peppermint tea, plus some chocolate-coated almonds.
6.30pm Dinner is a home-made green vegie and chicken soup with kale salad and a cheese toastie.
8pm A liquorice tea in bed.
Dr Joanna McMillan says:
Top marks for … Eating up the leftovers from your daughter’s brekkie: that’s one way to reduce food waste! Your main meals are all spot on with a lovely mix of vegies, legumes and wholegrains for good gut health, while the chicken and cheese add high-quality protein.
If you keep eating like this you’ll … Potentially fall short on minerals, including iron – best absorbed from red meat and molluscs such as mussels and oysters – and calcium, as you had only one serve of dairy.
Why don’t you try … Opting for lean red meat 2-3 times a week and choosing mussels or oysters more often. Ensure your oat milk is calcium-fortified and top your curry with a spoonful of natural yoghurt.
