The revamp of Toowoomba CBD venue the Spotted Cow is complete, and no one is more relieved or satisfied than new owner Scott Hempel.
The director at Hallmark Group is excited to see the public’s response to the pub when it reopens on Saturday morning.
It comes nearly three months after the company revealed it had purchased the classic venue, which had been run by the Coorey family since 1990.
What’s On Projects then completed a $1.5 million renovation of the venue, with the help of Toowoomba tradespeople.
Mr Hempel, who grew up on the Darling Downs and actually used to drink at the pub, said he hoped the finished product was the right mix of modern finishes with classic atmosphere.
“The finish was really good, the main thing we wanted to do was make sure it had all the modern touches but still maintained the feel of the original,” he said.
“It’s not a radical departure, we’ve got a lot of modern features and upgrades.
“The bistro will have the floating grill, the dry-aged steak cabinet and we’ll offer a full dining service.
“I’m hoping everyone will be impressed with the finished product.”
Mr Hempel said the venue had hired about 25 locals for a variety of roles, with the kitchen being managed by ex-Norman Hotel chef Linton Smith.
Live music is also expected to be offered four nights a week from Thursday.
The Spotted Cow will host a VIP event tomorrow night before opening to public at 10am on Saturday.
