The owners of the Spotted Cow have given residents a glimpse at what they can expect to see when the venue reopens to the public on Saturday.
Hallmark Group has been busy completing a $1.5 million renovation of the pub, after buying it from the Coorey family earlier this year.
The venue will focus on dining, gaming and socialising, which Hallmark director Scott Hempel said was part of retaining its country charm.
“The Spotted Cow has undergone some revamping over the last few months, and we are so excited for locals to rejoice in the reopening of a venue they already know and love,” Mr Hempel said.
“The Spotted Cow is truly an institution and honouring the venue’s local history and charm amid the renovations has been paramount for Hallmark Group and myself.
“Having grown up in the Darling Downs, I certainly have fond memories at the Cow – a place where you could sink a schooner, yarn with a neighbour and feel that genuine sense of community spirit.
“We are looking forward to welcoming the community back and will uphold the Cow’s reputation by continuing to provide the best classic pub eats, TAB, gaming lounge, live sport and entertainment in the Darling Downs region.”
Hallmark Group has also named its head chef, with ex-Norman Hotel steak guru Linton Smith leading the team in the kitchen.
“Our steak will be a star offering thanks to our new dry-age cabinet, where we’ll be storing and dry-ageing our beef to maximise the consistency and intensity of flavours – we will also have an impressive floating wood fire grill,” Mr Hempel said.
The venue will host a VIP event on Friday night before the official opening at 10am on Saturday.
