Revamp of Toowoomba’s The Spotted Cow on track despite shipment delays due to COVID-19
The new owner of the legendary Spotted Cow in Toowoomba says he is confident the pub will be reopened before the Christmas season, despite some delays due to COVID-19.

Hallmark Group’s Scott Hempel was onsite this week to oversee the start of the final stage of the Spotted Cow’s redevelopment, which is expected to cost about $1.5 million.
Mr Hempel, who grew up on the Darling Downs, said he had hoped to be open by now but delays on key interstate products due to COVID-19 had pushed it back.
“It’s all the finishing touches and hopefully this week we can announce when the actual opening date is,” he said.
“It’s all hands on deck — there would be 20 guys on site at the moment.
“The lead times on all the products and fittings have been the biggest challenge — COVID hasn’t helped that side of things.”
Mr Hempel said the final stage was the most satisfying part of any project.
“This is the nice part of the project where you have everything in, and it’s now about the finishing touches,” he said.
“This is the satisfying part, where you can see it come together.”
The venue is expected to have a greater focus on dining and gaming as part of the new ownership.
