Of course it's set up for singing - a business must with Filipino customers - but classic home-style dishes are the daily focus. Pumpkin fritters with dried prawns are a crisp shreddy mix, zinged up with garlic vinegar dip. The iconic adobo is tender chunks of chicken in a mildly vinegar-tangy sauce, thoroughly studded with peppercorns. Sisig arrives sizzling, a nicely fatty jumble of pig's head bits, with a raw egg to be stirred through, quickly cooking in the dish's heat.
