You may not be able to travel to Turkey this summer. But the next best thing is on the cards when Arbory Afloat returns to the Yarra from October 26 with a fresh new look inspired by the country's Turquoise Coast.

Turkish-born siblings Nada Thomas (ex Cecconi's and Press Club) and Salim Gafayri (ex Bar Nacional and Cecconi's) are designing a menu of updated Turkish classics, alongside executive chef Nick Bennett. Think imam bayildi (stuffed eggplants) with herb and burghul pilaf and raki-cured kingfish.

Over spring and summer, Melburnians will be able to soak up the sights and sounds of an Aegean resort, with thatched roofing, olive trees transplanted from Swan Hill, Missoni-inspired upholstery, cabanas and a swimming pool on the upper deck of the bar.

This is the sixth season that the multi-level floating bar has dropped anchor beside Flinders Street Station, with a different sun-loving theme each year.

Although licensed for 1100, initially the dining capacity will scale down to 50 seats. Live music and other performing arts will return, along with end-of-year celebrations. Bookings, including early-bird tickets for a New Year's Eve party themed around fashion label Versace, are on sale from October 11.

Open daily 11.30am-1am from October 26.
