Chin Chin might be the most Melbourne of Melbourne restaurants to open in Sydney this year, but the Surry Hills-bound restaurant has nabbed a couple of the Harbour City's hospitality staples as part of its opening team. Craig Hemmings, the long-time GM at Guillaume at Bennelong, will undertake the same role at Chin Chin Sydney, while former MG Garage's Chris Matters has landed a group role for the Melbourne-based restaurant outfit.
