Pappadums with sashimi tuna

Ingredients
3/4 cup oil (approx), for frying
8 small pappadums
100g sashimi tuna, thinly sliced
1/2 tsp good quality curry powder
1/2 tsp sea salt
2 tsp finely chopped chives
Method
- Heat the oil in a small skillet over medium heat. Break off a little piece of pappadum and drop it into the oil. If it puffs up immediately, the oil is ready. If it browns too much, the oil is too hot.
- Cook each pappadum individually by sliding into the hot oil (they take only a few seconds) and cooking until they puff up and turn golden. Remove with tongs and set aside on paper towel.
- Place one or two slices of tuna into each pappadum, sprinkle with combined curry powder and salt and garnish with chives. Serve immediately.
