Easy muesli slice
Dried stone and vine fruits are extremely tasty and, despite being stuffed with vitamins, minerals and fibre, most kids can't get enough of them.
Ingredients
1½ cups chopped mixed dried fruit
2 cups rolled oats
1 cup desiccated coconut
1 cup cornflakes, crushed
225g butter, melted
2 tablespoons honey
½ cup caster sugar
Method
Pre-heat oven to 160C.
Combine dried fruit, rolled oats, coconut and cornflakes in a large bowl. Mix melted butter with honey and caster sugar in a medium bowl until sugar is dissolved. Add butter mixture to dry ingredients and stir until well combined.
Spoon mixture into a 20 x 25cm greased and paper-lined baking tray and press gently with hands to flatten the mixture slightly. Bake for about 40 minutes or until cooked and golden.
Cool and then refrigerate until well chilled, cut into 5cm x 6cm slices and store in an airtight container.
