It takes a stroke of genius to get the volatile variables right when your new cafe takes its first infant steps. The aptly named Einstein's 251 has it nailed. There's an infectious joy on the floor and some cracking cafe classics from the kitchen. 'Jack's burger' is a subtly spiced lamb and beef number with beetroot relish and smoked paprika-dusted fries; a special bratwurst dog comes loaded with sauerkraut; and the huge reuben sandwich is a crowd-pleaser. Salads such as the spiced chicken, cous cous and pumpkin reveal a lighter touch. The coffee is serious, too.
