Why this Bennelong chef is flipping burgers during lockdown
What are the chefs at Sydney's closed fine-diners up to during lockdown? Well, at least one of them is headed to Bondi to flip burgers.
Anna Moretti, a member of the kitchen brigade at Bennelong, is involved in a burger pop-up at the new Bondi Liquor Co.
"Anna was basically sick of doing nothing and jumped at the idea to do a little project," says Sean Royle, who is driving it.
"I have a consulting agency and have managed venues like Bennelong and Four in Hand as well as being a founder and owner of Eightysix in Canberra and opening Franca Brasserie."
With their collective pedigree, the burgers should hit a pretty high note. There's a classic cheeseburger on the menu, but also a parmesan and truffle burger with a splash of tarragon mayo and caramelised onion.
