Like many Sydneysiders, Vince Lombardo wants to spend summer down at Bondi Beach. Where Lombardo is different from the rest of us is that he wants to take his restaurant-bar with him.

A pop-up version of Surry Hills' Maybe Frank opens on Thursday at the Beach Road Hotel, in the first-floor space where BL Burgers and Truckstop spun their wheels.

Lombardo has given the idea of the beachside pizza serious thought. To start with, he's retooled his pizzas into smaller sizes, because he believes the vacationing Frank fans will want a smaller snack-sized pizza and a drink after a dip.

"We're not opening until 2pm on weekends. I have this idea of people wanting to go to the beach then turn up here later," he says.

The pruned menu includes a margherita ($11), the sausage, truffled pecorino and rosemary-topped Alba ($15), and a sweet Nutella finale ($10).

He offers gluten-free, but stresses they don't make the bases. Oh, and you can also throw back a Negroni or Aperol spritz while you're there.

There's a terrace, and they've recently renovated the building. Worth a summer squiz.

Open Wed and Fri-Sat 6pm-midnight; Thur and Sun 6pm-10pm.
