Steak & Co by Sean Connolly opens at West HQ in Rooty Hill
On Friday former Sydney Morning Herald Good Food Guide Chef of the Year Sean Connolly will slide behind a butcher's counter when he opens his newest venue.
Steak & Co by Sean Connolly is a long way from the Sydney CBD where Connolly earned his stripes, but West HQ in Rooty Hill has lured a posse of Sydney food names.
On the other side of the food court from Connolly, Stefano Manfredi's Pizzaperta will open late next week. Chu by China Doll will launch in September with a $4 million interior.
Steak & Co might be rapid-fire with buzzer service, but Connolly says they haven't scrimped on a design he describes as inspired by 1950s butcher shops.
"It's as good a fitout as anywhere in the world," he says.
It has its own oyster shucking station, and will also be selling king crabs.
"The Co in the name stands for crab and oysters," Connolly says.
The chef is a self-described sucker for crumbed oysters, so expect them on the opening menu.
In the meat department, they are dry-aging beef and throwing tomahawks on the grill.
Richard Errington, chief executive of West HQ, says the launch of Pizzaperta was marginally delayed so Manfredi could properly prepare his pizza oven over a two-week period.
From December the $140 million development will include the Sydney Coliseum Theatre, with the Sydney Symphony Orchestra and Dame Edna already booked in.
With Sydney's west delivering infrastructure and population growth, Errington says they are playing the long game: "You don't build a two-lane highway when in time you'll need four lanes."
