Tristan Rosier goes solo in Surry Hills
With Biota and Est. on his CV, along with head chef stints at Farmhouse and Dead Ringer, when Tristan Rosier opens his own restaurant you take note. The chef will open Arthur, a 35-seat restaurant with his partner, Rebecca Fanning, in the former Surry Hills site of Bar Baretto on October 24. "Arthur was my grandfather's middle name," he says.
Rosier and Fanning met when both were working at Farmhouse, the pint-sized Kings Cross restaurant which has given him some inspiration for Arthur. "I like that idea of really good quality food and the set-course menu," he says. "It'll be $70 a head, which I think is really reasonable." Rosier says his set menu will include 11 plates, all shared, some bigger and some smaller. "A raw dish will always feature and two desserts, one of which will be a bit naughty."
The chef scoured a number of sites before settling on the Bourke Street Bakery end of Surry Hills. "We were close to going into Enmore, but this one is perfect, I live next door."
