N2 Extreme Gelato to open Tokyo Lamington in Sydney
The French populated the world with macaron boutiques and the Americans spread the cupcakery, is it Australia's turn with the lamington?
When the team from N2 Extreme Gelato decamped Sydney a few years back, they opened a spin-off brunch club in Tokyo.
When they put lamingtons on the menu, they started moving like, ahem, hotcakes.
The lamingtons have been such a hit that N2 co-owner Eddie Stewart explains they are looking for locations in Sydney to open a new concept, Tokyo Lamington.
These aren't just any lamingtons, they might be black sesame-flavoured with toasted coconut.
They've just done a collaborative lamington with chocolate brand Koko Black, which you can purchase in Koko's Melbourne and Sydney stores on July 7, otherwise known as World Chocolate Day.
Stewart isn't putting any boundaries on the lamington.
"I've had an idea for a savoury one in my head for a while: bacon and cheese with a molten cheesy centre."
