Sydneysiders will get their first look this week at Hamish Ingham and Rebecca Lines reboot of their Barangaroo restaurant Banksii as a Mexican restaurant, Tequila Daisy.

On Friday they will open the venture's takeaway area, Bar Taqueria, which Ingham told Good Food will sweep the venue's cocktail list (the coconut and elderflower margarita sounds pretty good) and the bar food menu.

"We'll do six tacos. You can also buy them as a finish-at-home pack," Ingham says.

After a long search for tortillas, the chef stumbled on a gluten-free version, and he's not sharing the secret of its source.

"We have a Mexican staff member. When he tried it he said it made him feel homesick."

Ingham's favourite taco fillings are the wagyu beef brisket with pickled red radish and the grilled chicken with red chilli sauce, which he describes as having "long heat".

While he'll roll out the more complex restaurant menu when eat-in diners are finally allowed in, takeaway customers will get a feel for the Luchetti Krelle reworking of the space, which has a long communal table, picnic tables and a colour palate of red, yellow and blue.

"We thought there was a gap down here for something like this ... and there seems to be a good trade at weekends, people looking to grab something to eat on the walk up to Barangaroo Park," Ingham says.
