There's plenty happening in Victoria's holiday spots this summer to lure you away from the beach, hammock or your favourite old pub.

Paul Wilson's bayside restaurant Morgan's Sorrento is stopping over in Mexico for the summer, offering a new menu that taps into the chef's passion for Mexican cuisine. Using Peninsula-grown chillies, corn and tomatoes, plus tortillas from La Tortilleria, Wilson is cooking Baja-style fish tacos, prawn aguachile, lamb barbacoa tacos and Murray cod with tomatillo-based mole verde. Dessert might be mango with salted chilli and sorbet, or a corn-caramel sundae. Runs until mid-March.

Chef Mischa Tropp (ex Rochester Hotel) continues to roam free. His next appearance will be at Red Hill's Avani Wines cooking a Keralan feast for lunch from December 28 to January 7. Drawing on beloved family dishes and new discoveries, he'll be serving wood-grilled calamari with fresh coconut and fennel, mango brulee with sweet curd, and more dishes designed to share ($95 a head).

Orbost craft brewery Sailors Grave is sharing the love with the rest of Gippsland, setting up two summer outposts.

The first, in Mallacoota, is up and running, and will open Wednesday to Sundays until January 28. The bar will offer eight of their hyperlocal farmhouse-style brews plus non-alcoholic options such as sparkling tea-based drink T.I.N.A, Bridge Road Brewing's Free Time, and sparkling quince-apple tipple Quincey. In the same lot is newcomer Alf's Pizza, with Neapolitan-style pies, and Origami Coffee. Seating is all outdoors: tables, chairs and picnic rugs.

The second fires up in early January, when Sailors Grave will set up shop in Meeniyan Square, serving West Gippsland holidaymakers its own beers plus Gippsland wine and cider. They'll be joined by Trulli Pizza and its gelateria. Stay tuned for a start date and details on events.
