Fancy a Gaytime at breakfast? Cult classic inspires a Soul Tree Cafe dish
It's fair to say Australian chefs are a little besotted by the Golden Gaytime. The corner-store staple has inspired a doughnut, Chinese-style deep-fried ice-cream, a cocktail – and who can forget Christine Manfield's signature Gaytime Goes Nuts?
Soul Tree Cafe recently opened at the Flour Mill redevelopment in Summer Hill, and the latest Golden Gaytime reinterpretation is front and centre of its breakfast menu. Consultant chef Tomislav Martinovic, an early adopter of molecular gastronomy in Australia, admits to being captivated by the ice-cream.
Martinovic's Golden Gaytime French toast has nearly made the menu at two other venues he has been associated with, but the perfectionist has been slowly refining it.
When he wasn't creating a menu with zaatar chicken and a sourdough toastie with beef brisket, Swiss cheese, truffle mayo and radishes for Soul Tree Cafe, Martinovic was working on an ensemble of brioche toast, blackberries, black figs and freeze-dried mandarins to go with the star of the show: Gaytime-inspired ice-cream.
"It was my favourite growing up," he says of the Streets ice-cream. "I obsessed about it."
