The opening of the Bali spin-off of Double Bay's Mrs Sippy is the biggest play yet in the Australian invasion of the holiday island's hospitality scene. The giant-scale venue has also found room for a last-minute Sydney recruit.

Guillaume Zika, the recently departed chef at the hatted Cottage Point Inn, has jumped on a plane in recent days to join Mrs Sippy Bali as consultant chef. With seating for 500-600 diners, the sprawling pool club includes a dive tower that looks like something out of the pages of Architectural Digest.

Co-owner Ben May jokes that it makes some of the pool clubs in Australia "feel like above ground pools in the 'burbs" by comparison.

"The pool is 1000 square metres, the whole place is 6000 [square metres], the size of a football field. [Designer] Kelvin Ho has done a great job giving it a Mediterranean-Mykonos feel," he adds.

The kitchen has a five-metre grill and a pizzaiolo flown in from Naples. "I'm going to work with executive chef Jonay Armas for about five months in Bali, but I want to come back to Australia at the end of the year and hopefully open my own restaurant," Zika says.
