THE Darwin International Laksa Festival now officially lives up to its “international” name, with a laksa-inspired lasagne created in Singapore, influenced by the event.
Swapping noodles for lasagne sheets and bechamel sauce for coconut cream, former Darwin resident Richard Griffiths and friend Billy Seah were inspired by Darwin’s festival to create the dish.

“My mate on the ground in Darwin, Gino Luglietti, had been posting and talking up the Darwin laksafest. We saw the NT News article with Gino and got to thinking about how great an idea the laksa festival is,” he said.
“We were checking out some of the innovative dishes on our phones like the laksa pie and laksa burger, and wondered why nobody had come up with a laksa lasagne.
